Nose: Walking through a seaside farmers market. Ripe peaches and savory dates. Baking cherries. Cockles and muscles. Fresh pumpernickel bread. Clay; rich fresh churned farm soil. Touch of soy sauce or resins. Wildflower honey, fresh Madagascar vanilla bean, orange blossom. Fresh rain on warm concrete. The nose on this is freaking absurd and bodacious.

Palate: The pleasure of a truly amazing trip comes from the discomfort of the differences. The contrasts. Umami. Pumpernickel with caraway seeds. Vachetta leather. Apparently Ryan likes to gnaw on rare Italian handbags. Baklava. Baked pine nuts and pumpkin seeds. Lime peel, pineapple and ginger. White pepper. Celery salt, laurel leaves, and old bay seasoning.

Rating: 9 / 10 – This dram hits every freaking note. Every olfactory element, every piece of my tongue, my brain just lights up. That makes it interesting. And then when it’s excellent, then it transcends. This is a glorious spirit. I’ve gone back half a dozen times to make sure it wasn’t just the moment for me. Now I need to have it slipped into a blind round to see if its expectation. Or put it side by side with the Palace Bar bottle.

Nose: Chicken marsala or a spanish garbanzada. Notes of butterscotch. Fluffy light sweet angel cake. Semi sweet chocolate and dried cherries. Dates and leather. Candied pecans. Such a nice line between savory, sweet and fruit. Like duck breast in blueberry reduction. Sweet cream.

Palate: The nose is the palate, very awesome. Cola/Dr Pepper vibes. Finish has loads of pecans and the mouthfeel of chewing on fresh Christmas nuts. I used to make a ginger, soy sauce, red wine and orange juice reduction which would boil down to a glaze that I put on salmon and cook it on a cedar plank. Toss it on a bed of spinach with dried cranberries and gorgonzola with a raspberry salad dressing. This has such big bold tannins. Coffee and dark chocolate. So concentrated. So good.

Rating: 9 / 10 – A freaking mouth punch of layered delicious sherry oak awesomeness.. come to papa.

Nose: Lemon poppy seed muffins. Which, if you weren’t aware, will trigger a positive for opium in a drug test. I know that because one of my besties got us in a whole lot of trouble when he didn’t read the instructions before taking his life insurance medical. That sweet and yet tart intensity of natural frozen yogurt. Clementines. Unripe fresh figs still oozing milky sap. Wildflower herbal tea with a spoonful of honey. Cedar chips.

Palate: Amazingly floral crossing into lavender. Rose hip black tea. Pumpkin seeds and raw almonds. Wheatgrass shot. Oddly numbing mouthfeel, like I just took my medicine. Szechuan peppers and cooked black peppercorns.

Rating: 5 / 10 – This reminds me of redbreast 21 without that beautiful balance at twice the price.

Nose: Pickled ginger and cedar with nigori saki. Rucula and celeriac. Orange water and catalan cream. There is a very subtle sweetness to the nose that is hard to put my finger on, maybe a buttered artisanal dinner roll. The empty glass has a slightly gamey smell, like elk jerky or rack of lamb.

Palate: Dark meat turkey with a massive helping of stuffing. Celery and onion, cubed bread soaked in broth, fresh parsley and thyme. Bit of yodelehihoo – a ricola lozenge. Robust peach black tea.

Rating: 6 (Ryan) 7 (Shane) / 10 – This is an amazing spirit. I can’t find a single flaw. Except at the end of the day, I just think I wouldn’t reach for it all that often. It’s just a touch off from what I prefer. So this is a rating for my palate. If you are into herbal, this is your bottle, easily an 8, even a 9. Something to be treasured.

Nose: Bit-O-honey and sugar babies, malt balls and fudgie the whale. There is something fundamentally different about old timey candy. Maybe the nostalgia of youth, or less high fructose corn syrup? Then the clean nose wrinkling vibe of dove hand soap bar. On an empty glass an explosion of cardamom and lemon grass.

Palate: Orange honey stick, hazelnut brittle, tropical fruit flavored soft fudge. Those sherry fruit notes I so love, ultra ripe figs and candied pecans. Then the Redbreast spirit comes through, a touch of bitter wood, like roasted green bell pepper flavored with celery salt flowing into huge tannic wood notes.

Rating: 7 (Shane) 6 (Ryan) / 10 – Blind I would have guessed this is a bourbon and absolutely love the interplay between the fruit and the pot still spirit.

Nose: Your classic big sherry nose. Date cakes & caramelized figs. Tootsie roll. Pralines and cream. And a whooping cherry cola brownie. Probably not a thing. But it sounds pretty good. Let’s make it happen people. a slightly astringent note which I’ve come to associate with redbreast single casks that Ryan and I now think of as celeriac.

Palate: Fennel and endives salad with grapefruit supreme and shavings of parmesan with fresh cracked black peppercorn. The sherry plays background orchestra and isn’t first fiddle. And ends on a wood smackero on the way out.

Rating: 6 (Ryan) & 7 (Shane) / 10 – Herbal and bitter and fruity and delicious. While I don’t usually swing whole hog on this side of the fence, today, I’m grooving with the punches.

Nose: Pure white refined sugar, like they use in fancy hipster coke. None of that high fructose corn syrup, this is a real deal homemade simple syrup. Cotton candy grapes. Under all the sugar sits classic sherry notes, sultanas, dates, figs. Spice cabinet, cloves, cinnamon. Touch of the old oak. This feels the most classic sherry cask of the redbreast single casks I’ve had.

Palate: The sherry cask influence dominates. A lot of those fruit flavors, but turned down a notch. Poached, not concentrated. Mild leather and dark chocolate. Oaky tannins at just the right decibel. Ryan thinks this drinks like a heavily oaked sweet bourbon but its leagues apart from an old Willet or Elijah Craig. What a sweet tooth of a pour.

Rating: (Ryan) 8 (Shane) / 10 – This is absurdly drinkable. It’s simple, solid all day long and lovely on all factors. But let’s be honest, it doesn’t challenge me in the way that it could. It’s the snapple of the single casks. I’d own a few if they had just priced it like the others.

Nose: Massive creamy nose. Jell-O Vanilla Instant Pudding Cups. Freshly made whipped cream. I was more a Ho Hos than a Twinkie fan, but this has eternal creamy shelf life written all over it. Mango and pineapple and oranges. A dash of cinnamon reminiscent of horchata. And the creamy funkiness of deviled eggs.

Palate: Oh… sooo much mango and pineapple. There is an herbal bitterness here, but its not intense and the tropical fruits whisk it away. And a fabulous savory creamy layer. Potato leek stew with a hefty dash of black pepper. Deep cola note. Cedar and sandalwood. Some anise lurking in the very background. Pineapple upside down cake all day on the finish with that touch of tartness. Like if pixie stix had a tropical fruit flavor.

Rating: 8 / 10 – What a gorgeous nose and finish. It’s rare that something liquid feels that velvety and has so much depth.
