Paul John 2015 Peated Bourbon Cask 739 57%
Nose: Fishermans friend, anise, cherry lolly.
Palate: Cachou lajaunie (licorice, mint), raspberry, peat smoke.
Rating: 7 / 10 – what a pungent and rich mouthful. Weird and in a good way.

Rating: 7 / 10 – what a pungent and rich mouthful. Weird and in a good way.
Nose: Rice krispies treat, dried apricot, barley sugar candy, nougat, sandalwood, dried hard goat cheese
Palate: Banana peel, graham cracker, old fashion clove candies. Cumin and ginger. Big fun palate with lots of flavors.
Rating: 6 / 10
Nose: Fruit bomb. Ripe cantaloupe melon, tons of honey, green olives stuffed with lemon pulp, fresh cut green wood and alfalfa, a young spirit ethanal note. A quite lovely nose.
Palate: A very dry citrus note, lemon blossom honey in white tea, Astringency is the connecting note, which makes it a hint hard to love, on the finish there is a yeasty note. This definitely benefits from a bigger mouthful.
Rating: 5 (Shane) 4 (Ryan) / 10 – I can’t tell if this is simply young and that is the astringent ethanol note, or if it’s the effect of the manzanilla. Super promising, I love parts of it, Ryan is less impressed.
Nose: Overripe figs, dirty old bandaid, super sweet dark grapes, fig newton, welch’s grape jam on rye, musty
Palate: Jolly rancher grape candy, and then ouch ouch ouch. Sour woody yuck. Sucking on aspirin. I know I should write more but I ain’t got it in me.
Rating: 5 (Ryan) 4 (Shane) / 10 – the first two thirds of the sip is great but then that finish… so close but nope.
Nose: Climbing Chalk, chamomile
Palate: Carob malt ball, slightly mineral.
Rating: 6 / 10 – lovely old spirit
Nose: Runeberg cake, marzipan, lemon pledge
Palate: Lemon peel, vanilla, almonds, hint of cabinet spices
Rating: 5 / 10 – a fine light pleasant pour
Nose: Plum butter, dried date nuggets, grape nuts, warm baked wood, banana marshmellows
Palate: Cherries, walnuts, grapefruit
Rating: 5 / 10 – totally pleasant
Nose: Some strange funk on the nose, along with white peaches
Palate: White wine cask notes, hints of peat
Rating: 6 / 10 – too rushed for good notes but nice pour. Keeping it anyways so I remember.
Nose: Cider, cider. Pear skins.
Palate: Beautiful clean bourbon cask. Carambola. Pear drops. Grapefruit. Honey. Stilton cheese
Rating: 6 / 10 – elegant, tasty but not something I’d chase for the age / price.
Nose: Leeks and potato soup, flash fried pimiento de padrón, portobello and hint of mole spices (cumin, cocoa, red chile powder, and cinnamon), mustiness
Palate: Big thick fruity wine notes, balsamic, stewed prunes, cherry concentrate, leather, coffee grounds, big tannin punch on the finish like chewing on a cinnamon stick
Rating: 8 / 10 – What a freaking wallop. This is shockingly good.
Nose: Mexican hot chocolate, pipe tobacco, puer, cascara
Palate: Slightly salty and umami. The weird sour funk of Umeboshi. Limestone. Potting soil. Black forest cherry cake.
Rating: 7 / 10 – a big complex profound full metal pour. Raise your glass.
Nose: Cinnamon honey stick, warm cinnamon roll, salt sea air, distant neighbors chimney with dry maple
Palate: Sea salt and toffee, chai spices, celery salt
Rating: 6 / 10 – quite nice frankly, but need to try it on a fresh palate.
Nose: Champagne/sherry vinegar, grapefruit, organic Cheerios.
Palate: Mignonette vinegar. Sweet n sour. Stale stick of Juicy fruit gum. Peach gummy rings, packing tape and cardboard.
Rating: 5 / 10 – the most acceptable of the three sister casks, but I’m not looking to lick my way through a major shipping service.
Nose: Butterscotch cream frosting, oats, honestly smells like a wort, browned butter, pot de creme, banana
Palate: Hay, buttered popcorn, banana marshmallows, warming spices, cinnamon latte.on the finish something slightly unpleasant. Envelope glue and wet cardboard.
Rating: 4 (Ryan) 5 (Shane) / 10 – it’s pretty solid until the finish… then I wish it would just finish
Nose: Perfumy, packing tape, pistachios and cardamom, patchouli, animal crackers, plain meringue – those huge ass ones you get half way through before you realize, that is just way too much sugar, cereal milk
Palate: That first time you have middle eastern or central american treats that use different sugars and flavors… pistachios and cardamom indeed, reminds me of grape nuts. And cedar. Lots of cedar and sandalwood. I feel like I just made out with a hippie.
Rating: 3 (Ryan) 4 (Shane) / 10 – different, but not in a good way
