Nose: Campfire toasted marshmallow. While my kids delight in watching them burst into flames, I’ve always believed in aiming for that perfect distance so they crisp to a caramelized golden hue. My daughter is now cooking for us regularly and loves flash frying pimientos de padron with big sea salt flakes. These peppers aren’t spicy but have a great dash of sweet tart that pairs so well with the salinity. Almost metallic, copper penny vibe I’ve come to associate with young peated killowen. Graham cracker crust with meringue pie filling.
Palate: HOLY WHAT THE WHAT. I took a break from spirits during the winter holidays just to reset my palate. What an amazing way to return. Every part of my tongue is dancing. Perhaps the greatest desert on earth is the classic It’s It. A large scoop of vanilla ice cream, sandwiched between two old-fashioned oatmeal cookies, and dipped in dark chocolate. A dash of sea salt. I’ve often wondered if you could make some kind of sweet dessert pastry with rye. Sweet n spicy. Google pointed me to Salted Caramel Nut Tart with Rye Crust & Spiced Rye Ginger Cookies. There goes my weekend.
Rating: 7 / 10 – It feels overzealous to rate it this high but this just nails every note for my palate. I’d buy this in large format. Where is my 3L bottle Brendan? The more I distill the more I can appreciate when new make is drinkable off the cuff.
Nose: Panda Express chow mein (sesame oil, black vinegar, cabbage), umami 😂 Pan roasted mushrooms with butter and garlic. Oyster sauce. Wet cardboard. Bok choy. Pimiento de padrón with sea salt. Clipped vines on the compost pile.
Palate: Wow that’s a wild departure from the nose. Snap peas. Watered down lavender lemonade. Rose hips. Long lingering light finish of grape skins.
Rating: 5 / 10
Nose: Greenhouse crops, tomatoes and vines, green beans, sugar snap peas. Slightly perfumey notes here. Green pear skins. Broccolini. Sun dried tomatoes. Light sweetness.
Palate: Mmm this is a fun journey. Pink peppercorn. Dried grapefruit peel. Slightly sweet, notes of spice to licking an envelope landing on a nice little berry, fig, and grape finish.
Rating: 7 / 10
Nose: Sage. California pepper tree. Slightly rotten lime. Peanut butter or butterscotch fudge. Those greenhouse notes with more subtle savory notes. Weird note, but smells like paper fresh off the printer with ink.
Palate: Licking envelopes, orange blossom water, unripe figs / fig sap.
Rating: 6 / 10
Nose: Cedar, tarragon YAAAAAZ, lavender, thai basil, corduroy bear, kinda creamy texture to the scent. Yuzu. Cinnamon bass note and underbelly that doesn’t dominate. I love this nose.
Palate: Dammmmn. lovely. That is a delightful match to the nose, all those herbal notes with that subtle cinnamon bass note. Ghost of yuzu. A long gentle warmth on the finish. The finish leaves you with the chardonnay grapes.
Rating: 8 / 10 – freaking interesting AND delicious
Nose: Wet oats and hay, clover. Graham crackers. Scotch tape, subtle paint thinner, and maybe shoe polish. With time you get those Indian spices on the palate. Chickpeas. Rooibos tea.
Palate: A nice Indian vibe here, chutney, masala, cinnamon. Key lime.

Nose: Some barnyard that then gets cleaned with a dial soap bar. Putting my nose into a copper pot actively popping popcorn.
Palate: Pipe tobacco and smoking a cigar. Light turon with hints of cloves. Cardboard.

Nose: This one is very different from the rest. Much simpler, honestly smells like a very mineralized water, maybe some subtle notes of fruit.
Palate: Mmm, unexpected, mixture of tobacco and fruit, well balanced and straightforward.

Nose: Garlic, olive oil, and mushrooms. Ground bruised stone fruit. Bok choy. Printer ink.
Palate: Nose matches palate here, fun! Compost pile. Fermented dried lemon peel. Bbqed watermelon rinds.
