Nose: Smells like newmake, pear skin, anise seed, sourdough
Palate: Playdough, salty, toasted caraway, sourdough or rye, mango, holy shit it’s fiery
Rating: 4 / 10 – there are a ton of fascinating flavors, but damn this burns.. The light it burns.
Nose: Carraway, rye chocolate notes.
Palate: Grapeseed oil, licorice root, pepper, chard, mustard plant
Rating: 4 / 10 – fun to try but too garden for me
Nose: Baked apple dusted with cinnamon, but with a nice acidity hinted at on the nose, closer to a fuji or pink lady. This is really pleasing
Palate: Cedar wood, dried sulfured apricots, stale sultanas. Sadly the palate isn’t delivering on the nose.
Rating: 4 / 10 – okay this is a strange one. The apple is there, and the hint of oloroso is there, but I taste more whisky influence than sherry influence. Maybe the first fill was an whisky? But while from the nose I think there was a lovely apple spirit, the cask twisted it.
Nose: Key lime pie, vanilla pudding, coconut flakes
Palate: Dry and a touch astringent, lemon cleanser, unripe peach
Rating: 4 / 10 – I like the nose but the palette doesn’t work for me at all
Nose: Sweet cream, this actually smells sweeter than their bourbons – go figure, fresh cedar.
Palate: Woo hot, def has that rye bite and spice right out of the gates, intense cloves, cedar, bright and woody, hint of anise, cinnamint breathmint
Rating: 4 / 10 – 95% rye
Nose: Packing tape. Really don’t like this nose but going to tuck in. I used to avoid brimstone like the plague when I started into balcones, but after years of inlay whisky, I’m going to give it another try.
Palate: Licking envelopes, strong wood, slightly bitter and tannic, very little smoke here as compared to the OG version
Rating: 3 (Shane) 4 (Ryan) / 10 – and nope. Still don’t like it. So far away from the 10th anniversary or the sherry cask one that Chip gave Ryan.
Nose: Sugar frosting, grape jolly rancher
Palate: Strong bazooka joes grape gum, mild sulfur note.
Rating: 4 / 10 – meh
Nose: Toasted pecans, coconut sugar, red vines, dried strawberries, plums, dried dates
Palate: Slightly dusty cardboard, past-date spices, pink peppercorn, peppermint
Rating: 4 / 10 – meh
Nose: Nestle cerelac, jasmine, floral soap.
Palate: Turpin, resin, grassy, skunky weed, green bell peppers, rosemary
Rating: 4 / 10 – fun but forgettable.
Nose: Mineral oil, unripe peaches, dry maple wood.
Palate: White pepper… this is hot. Crisp white peaches, dried apple, honeysuckle, limestone / chalky.
Rating: 4 / 10 – this is too young to enjoy. The elements are interesting but it’s just hot and the flavors have yet to meld well. Time will tell.
Nose: Perfumy, packing tape, pistachios and cardamom, patchouli, animal crackers, plain meringue – those huge ass ones you get half way through before you realize, that is just way too much sugar, cereal milk
Palate: That first time you have middle eastern or central american treats that use different sugars and flavors… pistachios and cardamom indeed, reminds me of grape nuts. And cedar. Lots of cedar and sandalwood. I feel like I just made out with a hippie.
