Nose: Vanilla wafers, sugary frosting, diluted windex
Palate: Comin’ in hot. Wood is real intense. Lemon pledge, lightest sulfur note. Finishes on a real green note.

Palate: Dry and a touch astringent, lemon cleanser, unripe peach

Nose: Sweet smoke. Reminds me of camping.
Palate: Light sweet smoke, honey suckle, oily palate, lemon pith

Nose: Gummy peaches, sweet smoke, cream toffee, pillow mints.
Palate: Olive oil, warm sourdough bread with a drizzle of honey, lick of smoke, white pepper and menthol

Nose: Warmed cedar plank (the type on which you bake salmon), maple syrup, salted caramel pretzel, a slightly sharp green smell – maybe arugula.
Palate: A sweet woody hug, with a tart finish. Right on line with the nose. The cabinet spices are so vibrant, very brown sugar simple syrup, with a dash of nutmeg. The bitterness, endives, last long into the finish. The heat is no issue at all even with the ABV.
Rating: 6 / 10 – the sweetness is wonderful, but the bitter finish is a love or hate thing.
Nose: Flambeed peaches leaning towards gummy peaches, grilled leeks, going to let it breathe a bit. Nose feels shy and restrained. White tea, jasmine flowers
Palate: How un-pouchegu, all fruits, and the oak tannins without the spice cabinet, yet quite delightful. Very elegant in some ways. Peach white tea. Gentle floral fruitiness. Then the bitter hits and this is almost aspirin bitter. It somehow work with the fruit. But not positive I can hang.
Rating: 6 / 10 – the fruits are wonderful, but like A6, the bitter finish is a love or hate thing.
Nose: Stewed apples, whiffs of smoked salmon.
Palate: Touch of sherry, sticky prunes and dates, dunnage and salty
Rating: 5 (Ryan) 6 (Shane) / 10 – super tasty. I am enjoying these later 12Y CS better than the earlier releases.
Nose: Old dried apple rings, bandaids, dried citrus peel, hint of old campfire or roasted coffee
Palate: Bright tangerine-lemon cleaner, rootbeer bottle caps, dandelion tea, endives salad
Rating: 4 (Ryan) 5 (Shane)/ 10 – Tonight I’m enjoying the bitterness, but I could see it being too much.
Nose: Rum cake, toasted pineapple, state fair kettle corn, deep fried everything, australian style strawberry licorice.
Palate: Farm funky, past their prime tropical fruits, phases into eucalyptus menthol and strawberries and soft tropical fruits. Tangerine peel, Fun ride.
Rating: 8 / 10 – so damn good
Nose: Touch of cinnamon, teddy grahams, banana peel, subtle but refined tropical fruits, pencil lead
Palate: GIVE ME ALL YOUR OLIVES, great oak, nice bit of cabinet spices (heavy on the clove, anise, allspice), a hint of tannic bitterness

Nose: Incredibly aromatic, prunes, dates, fresh snap peas, mom’s greenhouse with distinct tomato plant. old oak. Loads of sugars.
Palate: The oak is strong yet not too drying. potent “green” vegetal floral note as well (dandelion greens, tomato vines), bit of honey, prunes and figs
Rating: 7 (Shane) 5 (Ryan) / 10 – this does not drink like an old rhum at first. I would swear up and down it’s an old cognac. Elegant. Floral. Then the green fresh notes and wood blossom. This gets much better with a large sip. A truly special pour. It’s a Salma Hayek of pours – absolutely gorgeous and yet doesn’t hold Ryan’s interest. He is broken.
